Rare animals offer you the most money but of course these are harder to find simply due to a lower number of spawn points and a much lower spawn rate. Skins and meat are no longer needed for crafting recipes such as ammo pouches or storage bags - they are instead sold to merchants (NPC's) around the world in return for money.
